  • Soggy morning here in Woodstock, and I feel a migraine coming on which I’m determined to not let win out on this busy work day, but as I’ve learned migraines have a mind of their own. So will take some morning coffee & “me” time before plotting how to best conquer my task list. ☕️

Thinking about this stunning Lemon Meringue Pie from a weeks ago, and realized I forgot to mention the recipe is on the blog (link in my profile). Before setting out to make Lemon Meringue Pie last year I always thought of it as a difficult pie to make, but it only seems that way because of its show-stopping looks. The crust can be prepared a few days in advance, rolled out, and kept in the fridge until ready to pre-bake. Same goes for the curd. Make it up to one week ahead, and then try to resist the urge to eat it all before you need it to make the pie. ✨
Last step is making the meringue, and that should be done the day you plan to serve it. I recommended a stand mixer for preparing it, but some patience and a hand mixer does the job just fine, too! The topping gets a little gooey on leftovers, but this isn’t necessarily a problem for me. I mean leftover pie is not a bad thing, am I right?

  • I think spring ☀️ has finally sprung but I’m not done with soup season. In fact, I’d eat hot soup on a balmy summer day; I’m weird like that, I guess.

The wonderful thing about this Thai Red Lentil Soup is how incredibly easy it is to make. I know people say this all.the.time. Provided you have all the ingredients on hand, it’s ready to eat in 30 minutes (and not so secretly one of my favorite breakfast foods, too). The real wonderful surprise about this soup, though, is my kids liked it. I went heavy on the red pepper flakes, expecting they wouldn’t even want to give I a taste, and turns out they actually love it, just requested a less spicy version next time. Yay for small victories.

So, make a checklist: dry red #lentils, coconut milk, vegetable broth, #curry powder, fresh #ginger, red pepper flakes, and add this soup to your menu ASAP. Link for recipe is in my bio. •

  • Every day is a chance to celebrate #EarthDay in our home. Whether it’s making sure we fill water bottles before leaving the house to avoid unnecessary plastic consumption, repurposing corn cobs to make one of my favorite broths, or rescuing overripe bananas to make my new favorite Tahini Buckwheat Banana Bread #recipe.

They seem like little things, but make a big difference when added up over the course of our lives (and also save a lot of money). So, it doesn’t really surprise me that I only realized yesterday was #EarthDay2018 when the announcer mentioned it on the radio after listening to Beethoven’s Symphony No. 6.

When you think about it, caring for our earth is the same as showing those we love how much we care. Would you show your husband/wife/mother/children/girlfriend/boyfriend just one day a year, or would you find ways, big and small, to show them how much they matter to your very existence?  Every time I tuck away an onion root, carrot peelings, or other veggie trimmings into my freezer stock bag, I’m not only saving money, I like to think of it as investing in the future of generations to come.
