Quick Homemade Crema (sour cream version)

Makes 1 cup

For best flavor and consistency, I recommend letting the mixture sit for 2 to 3 hours, but if we’re being truthful here, then I’ll admit I’ve used it after as little as 30 minutes. It’s still way better than sour cream on my tacos, in my opinion.

1/2 cup (114 grams) heavy cream

1/2 cup (118 grams) sour cream

Sea salt, a pinch, or more to taste

Add the heavy cream, sour cream and salt to a medium bowl. Whisk to combine. Cover the bowl loosely with a towel. Let it sit out on the counter, for 2 to 3 hours. Use immediately, or transfer to a jar, cover, and store in the fridge for up to 2 weeks.
