Favorite Tomato Recipes | In Jennie's Kitchen

I’ll make it short & sweet for this next to last Monday of summer vacation (at least for those of us with post-Labor starts to school—thank heavens!). If you overbought tomatoes like I tend to do, you’ll be happy to see my list of favorite recipes from over the years. Or maybe you just want to extend the season as long as possible with some canning projects—I’ve got you covered there, too.

I’d be hard pressed to pick an absolute favorite, so rest assured that every recipe on this site is one I love. I’ve already put up some of my tomato jam, and the first few jars of marinara sauce. I will try to do a post on canning sauce, but the clock seems to tick faster than I can keep up. The no-cook tomato basil sauce has been devoured more than once, and oh how I dream  about fried green tomatoes. One recipe I don’t have on this site is for a savory tomato tart. Does anyone have a recipe out there they love? I’ll probably work on a small batch one soon since there’s no way my kids are going to touch a savory tomato tart.

Great! We are drowning in ripening tomatoes so I am grateful to have additional recipes. We love the tomato pie from Vivian Howard’s book Deep Run Roots & we also make one that is basically a savory cheesecake with a think layer of “cheesecake” made form soft goat cheese, fresh thyme, eggs & salt & baked topped with thick slices of tomatoes.
