I make zucchini quite often but this preparation is new to me. I will try it next week.

Oh, that dish from Prune was SO good. As you were describing it, and your own version, I could almost taste it. A great memory...

Jen @ My Kitchen Addiction

I cannot wait to try this! And, I have plenty of fresh zucchini on hand from our CSA. I love how simple it is, too. Lovely! I'm so glad you remembered this dish from our lunch and decided to recreate it!

LiztheChef

I will have to try this to believe it, but your tomato jam keeps me worshipping at your feet. Good luck with the book - it will happen.

Allie

This looks AMAZING and I will certainly be trying it this summer... I also have another question for you, since I know you're the queen of marinara: What is the best way to store prepared marinara? I've heard tomatoes are bad for plastic tupperware.

Jennie

Liz—it is certainly one of those dishes you have to taste to believe how good it is.

Allie—Tomatoes do tend to discolor plastic, and there's the whole BPA question, although there are plenty of BPA-free options available today. All that said, I prefer to store my marinara sauce in a glass mason jar, even when I'm not canning it. I just think the glass is neutral and doesn't affect the flavor.

Brian @ A Thought For Food

What a unique preparation of zucchini. I have no doubts that it's wonderful!

I need to make this immediately. I forgot who it was that made it last night on twitter, but I was swooning. It's time to go shopping because I'm missing some JP recipes on our table.

Jennie, this sounds so interesting! My boss recently tried a Prune-like restaurant here in Boston and came back raving about this amazing braised watermelon she had tried there- she said it almost had the consistency of a steak. I have been thinking about braising some summer produce every since then, but didn't really know how to start. This will be an extremely helpful guide!
