JP's Note: You're very welcome ;)

Just seeing this does my heart good. I love egg salad but I know I could do without the mayo (and I never have mayo on a sandwich unless it is egg or tuna salad). White bean hummus, on the other hand, might just take mayo's place for good!

Carolyn

This looks really good, but your mention of an egg white mayo recipe caught my eye. Would you be able to share that some time? Continue to love your blog. Thanks!

JP's Note: Carolyn, thanks for stopping by, as always. I will definitely share that egg-white mayo recipe soon. Promise.

I think I am going to have to make this for my mom very soon....right after three of your other recipes.

Hi Jennie,

I just came across your blog and I LOVE it! I feel like cooking just about every recipe in here! I hope you don~t mind, but I have a question about a post in 2010 that has the comments closed already. I was wondering if you remember where did you get that bun you used for the burger (or, if you made it yourself, could you share the recipe?) It looks so delicious and I was never able to find anything like that for my homemade burgers. This is the post I'm talking about: http://www.injennieskitchen.com/2010/03/lentil-burgers-crispy-oven-fries.html

Thank you so much and I will be following your updates closely now!

JP's Note: Welcome Dea! Oh yes, that was a yummy bun indeed. It was actually from a local bakery. I'm working on a sandwich bun recipe myself, and hope to post it soon, maybe in time for summer grilling :)

If you truly love BLT's, and truly hate mayo, try BLT with a spicy brown mustard. A little restaurant/bar in Austin served it this way, and I love it! I am also not a mayo fan, and can't wait to try this egg salad recipe soon - gotta use up the dyed eggs! Love your blog!

You are too funny...all that you will do and then there is mayo. But...I have a similar thing with green peppers. I have never met a dish with them that could get me over the fact that I just despise them!

I love the idea of the lemon thyme. With or without mayo.

Molly

There's something about mayo that makes me pretty squeamish, and, to quote my sister "egg salad is not a food; it's a weapon." However, this dish might change both our minds. Thanks!

JP's Note: Molly, I would've definitely agreed with your sister before giving this recipe a try ;)
